Warm eggplant puree served with fried meat (lamb, sheep or beef) is a traditional Turkish dish called Hünkar Beğendi. In translation it means the Delight of the Sultan. The dish is said to have been invented for Sultan Murad IV (1612-1640), who, though a ruthless ruler, was conquered by this dish.
